Dry milk products are probably the most sensitive to environmental conditions storage foods there are, particularly to temperature and moisture content. Their vitamins A and D are also photosensitive and will break down rapidly if exposed to light.

The area where your dry milk is stored should be kept as cool as possible. If it is possible to do so, air-conditioning or even refrigeration can greatly extend the nutrient shelf life.

I don't drink alot of milk, so it mostly gets poured out after going sour. Last night I needed 1 1/3 cup of milk for a recipe, and of course I didn't have any milk. I didn't want to open my box of powdered milk for such a small amount, so I cheated and used a cup of water and 1/4 cup of non dairy coffee creamer. It worked just fine, no difference noticed in the tases of the food. (course it was just hamburger helper). But this worked in a pinch.

You could try freezing the milk in quanities you know you will use.

:arrow: About the milk, condensed milk is the sweetened milk, evaporated milk is the whole milk needing only water added to use as regular milk.

You add one cup evaporated milk for every gallon of reconstituted powdered milk to add a milk-fat to the milk. I've also seen recipes where you add one teaspoon (tablespoon?) of vanilla to the mix to improve the flavor. Letting it chill in the fridge overnight always helps.

Back when I started storing food I stocked up on some canned milk products like evaporated milk and sweetened condensed milk. I've found they don't store very long--the expiration date on the can is pretty much all they're good for and I don't use them often enough to rotate through them quick enough. So check out my post over on Utah Preppers for some information on making evaporated milk and sweetened condensed milk from powdered milk. Powdered milk stores way longer than canned milks (I'm currently using powdered milk canned in 1998 and it's fine), so making it from powdered is the route I'll be taking from now on for my canned milk needs. ---CONTINUED---

Image I decided to find out once and for all which powdered milk my family likes best. I didn't realize how important this was until we started living off food storage. I thought (naively) that if there was nothing else to drink, they would drink it. Wrong. Before we started food storage, my family was drinking 5 gallons of milk a week. I tried a new kind of milk this week. It's GREAT! Definitely my favorite so far. And unlike Morning Moos, it's real milk, and not milk substitute. It's called Country Cream by Grandma's Country Foods. So far this is the winner to replace all the milk I have stored from the cannery. Shipping is kind of pricey but I hear that it is also available at Macey's grocery stores in Utah Valley. I'll have to have my sister check it out for me.

Milk-Rice Milk

Rice Milk

The majority of us who are prepping will not have immediate access to dairy animals if TSHF and unless you have adequate stores powdered skim or whole milk you will be out of luck in that department.

A passable alternative can be made from white rice. It does not have the nutritional content of animal milk but you can put it on cereal or drink it plain as a beverage and it does have an advantage, its fat free.

It is simple to make and it tastes pretty good also.

Rice Milk

1 cup White Rice
4 to 6 cups Water
1 tsp Vanilla
Sugar to taste

Wash the rice thoroughly then place in the saucepan with about half the water and cook until soft.

Mix rice with the remaining water and vanilla, pour into a blender and puree until the mixture is completely smooth.

Let the mixture sit until the sediments sink to the bottom of the blender and then pour through a strainer to catch any particles that didn't settle out. If the liquid is to thick to run through the strainer, add more water.

The amount of water can be adjusted to suit individual preferences and you can add sugar to taste if desired. It can also be mixed with animal milk as an extender.

Most of us will have large quantities of rice stored so this can be made as long as the rice holds out.

Types of Nonfat Dry Milk

Regular and instant nonfat dry milk are made from skim milk that has been dried by spraying into hot air. Instant milk is regular milk which has been further processed causing it to clump together which results in a product that is easier to reconstitute with water than is regular nonfat dry milk. They both have the same nutrient composition. Regular nonfat dry milk is more compact and will require less storage space, however, it is harder to reconstitute.
The most common type of dried milk to be found in grocery stores is instant nonfat dry milk.

Dried whole milk may also be available, however because of the fat present, it will not store as well as nonfat dry milk.

Dried buttermilk is available to be used in recipes calling for buttermilk. It will not keep quite as long as nonfat dried milk since is has a slightly higher fat level. ---CONTINUED---

Milk: Powdered milk: If you have electricity, powdered milk is best if you use warm water, mix with a blender and chill overnight.

Buttermilk: 1 c water, 1/3 c dry milk, 1 Tb vinegar or lemon juice. Let it sit 5 min.

Condensed milk: ½ c hot water, 1 c sugar, ¼ c dry milk, 1 c water. Place in canning jar with lid and shake until thoroughly blended.

Eagle Brand: 1 c hot water, 1/3 c corn syrup,1 2/3 c sugar, ¼ tsp vanilla, pinch of salt, ½ c butter, 2c dry milk. Place all ingredients except butter in canning jar with lid and shake until well blended. Gradually add the butter and shake each time until well blended.

Evaporated: 1 c water, 2/3 c dry milk. Whole 1 c water + 1/3 c dry. Skim: 1c water + ¼ c dry milk.

Milk on the shelf: Technology has given us real milk that sits on the shelf and has at least a 1 year shelf life. It comes in quart containers, available in whole, 2%, vanilla soy, almond and rice milk.

I bought quite a few cans and have used most of them over the years. However, I only have two recipes I regularly make that call for evaporated milk, and one that calls for sweetened condensed milk, so I did not use every can I purchased before they expired.
