Result: If you were starving you could eat it (if you added a whole stick of butter) but the taste was definitely "off". It has a cardboard/papery taste and it ended up being thrown out.

Recommendation -- rotate sooner

When using mylar bags to store bulk potato flakes, should you put in dessicant packs as well as O2 adsorbers? I searched the archives but got no response.

I only used O2 absorbers, some I vac sealed with the food savor and mason jasrs

I have most of my instant mash flakes stored in glass with rubber gasket seals, no O2 absorbers or dessicants, Some of the older stuff has changed colour slightly, from white to cream- but even flakes from ten + years still mashes and tastes fine.
NB. I like it mixed with chicken and crouton powdered soup in a plastic pint mug for breakfast when I'm camping/hiking.
